I am in need of a program that will accept audio via the USB port (no line-in on my iMac) and save as an AIFF file.

Does Quicktime Pro do this? How about iTunes?

For starters, you need something like the Gryphon iMic which allows you to input audio through USB. Attach a line or microphone and you are all set.

As for the audio, I use Audio Hijack Pro from Rogue Amoeba. There is a demo version available at the site. It can capture audio from any application or source and save it as AIFF, mp3, etc. Awesome app.

There is also Audio Recorder which is freeware and very simple to use. It can be found at Audio Recorder

FYI - Audio Recorder is mp3 only. If you need AIFF, you'd have to convert it with another app. I think QuickTime Pro might let you do this but not the free version.
