It sounds to me like you have both OS's on their own partition. If that is the case you might have to reformat the hard disc and change the partitions. You might be able to use the OS9 partition from imovie but I am not 100% sure of that.
You can add as many items do the dock as you want. I once saw a thread where somone had put 500 items in their dock.
