I'm still debating about whether or not to get one but, if I do...

Right now I have 2 120GB WD-IDE drives in my G3. They are both loaded with system software (OS X), applications and data. Can I just pop both these into the new G5 (replacing the original) or will I have to back up, format and re-install everything.

Depends if your drives are Serial-compitiable. If they are, yes, you can just pop the drives into the Power Mac G5 and be good to go.

Most likely the G5 will run a special build of 10.2.7 - it may be unwise to replace the drive in this case.
Look into using "firewire target disk mode" to transfer the needed files.
