Any way to change the default file locations?

I'm working from several Macs in several locations and need to keep all this data in one place, preferably in a portable hard drive and not a .Mac account.

Install OS X on a 2.5" Firewire hard drive and boot the Macs from it - I don't think this will work if you are using both PowerPC and Intel Macs though. If you can describe the particular Macs and applications you are using I could help more, say if all the Macs had FW800 ports it'd be beneficial to use a drive that supports this faster speed.

The common denominators to all systems are USB, FW400 & MS Office; the rest is a mix is between: Tiger & Panther; different versions of MacMail, iPhoto & iCal; PowerPC & Intel; Mac & Windows.

I'll give your idea a try and publish the results here.
