If that's really all she does, leave the RAM as it is. More than enough.

My sister is buying a new MacBook, it comes with 1GB of RAM.
Would her new MacBook benefit from more RAM or is that default enough?
She surf, emails and plays on-line games at Pogo.com and not much else.

Only if she is using Office would we recommend 2 gigs. - anything Rosetta really benefits tho the Core2 are better.

Will she ever click on a link and open a YouTube video whilst she surfs? Get the RAM aftermarket for all of $80 or so for the 2x1GB.
