How to set a date for OS X mail to send email...
How would I set up an email to send say on next wednesday?
Could I set this up so a message I write sends automatically on a specific date i choose??

I have not tried this as I am not an iCal user - yet.
How about configuring iCal with OS X Mail so that when a particular date arrives a mail is sent? I'm not sure that it has enough options to do what you're after but approaching it from that angle might accomplish what you want.

i've never tried this in mail but i do know Entourage has a send later feature
