I was reading stuff about panther and it talks about "10.3 panther" and "10.3 goldmaster".....what is goldmaster?

If you mean "golden" master, then it means the last version of the product before it goes to the "presses". Before the CDs are mass produced for public distribution. In other words, the final version.

Gold Master is the exact, bit for bit master disk sent to the duplicators to make commercial CDs or DVDs. At one time (back when they were $25 each) the data side of CD-R disks were gold in colour.

With software, it usually refers loosely to the final version of a product; ie one declared to be ready to ship.
