Network Backup Help Please

Hey Everyone,

I'm trying to work out the best way to backup my entire shop. I have four Mac's and three PC's that I'd like to backup. I don't mind having two separate backup solutions for the PC's and the Mac's.

I'd like to have a bootable backup of each of the four Mac's, which I can take home every night. They consist of:
1 x Mac Pro with 4 x 500G drives set up as 2 x striped 1TB drive's and mirrored.
1 x G5 Quad with 2 x 500G drives set up as a mirrored raid.
1 x Intel Imac with 250G.
1 x Macbook with 160G.

My first question is whether I can use one external drive (probably a 3TB) to make a bootable backup of each of these four computers to take home each night? Do I need to partition the external drive?

The PC's only need to be backed up once and stored offsite. Can this be done on one external drive if they are to be bootable? Again, partitioned or no?
