i've got a few G5 towers, but not a quad. All the other ones don't really use a caddy. You put 4 screws in the side of the drive, and the screw heads feed into slotted tracks. The drive that goes on top actually has to be inserted first, and the side slot is a bit S shaped, so it starts lower than you'd expect.

But to be honest, I never bother. Just stick the drives in one on top of the other, and don't bother with the side screws. Don't tip your Mac on it's side, though. Even if you do, the SATA cable connection will probably still hold the drive in place.

I just checked my G5 2.7 GHz.

There are 4 of these screws with the special oversized head, screwed into a plastic plate just to the left of the drive bay. The plastic plate is perpendicular to the side of the computer. These must have been for a second drive, since the first drive would have come installed already with the screws.

Give me a photo of the plug.. I may have one from a 17" iMac that may fit. Maybe even a g5 cord somewhere.

Any local computer fixit store should have a bunch of those cables available and surplus - maybe even free. ;)
