How can I do Bcc in Mail? Is there a preference I should be adjusting?

Which version of Mail are you using?
In the older one I think there was a menu item or a key combo you could hit to activate that in a compose mail window… like command+shift+b I think… In the newer version of mail, there is a little icon in the compose window that has a drop down with a few options you can activate in it: BCC, Priority and such.

I can screen cap it later tonight if you haven't found it by then.

Under the "view" menu click on "Bcc header"

I'm using Panther 10.3.9:
In Mail menubar, View, see BCC Header? Can be activated as "always on" by scrolling to the header when highlighted and clicking ON. Or can be selected for individual replys using Option/command (apple)/B.

Try that.
