Since upgrading to IOS 6, I've noticed that when clicking Send in Mail (on my iPad), I get the swish sound immediately. They all appear to have been sent. Just an observation which I wonder if others have made.

Yes - I noticed that they've changed this. It can be a bit misleading because more than a few times I've heard the swish, but I've been in an area of marginal network and the mail never got sent until much later.

The cynical view might be they are tricking you into thinking the system is faster than it really is. The other view might be that the swish sound is supposed to reassure you that the mail is queued up. Given that we are all quite used to the sound meaning that the mail was actually sent, I'm not a fan of this change.

I also don't like it; using some mail servers takes a few seconds to send, and I like confirmation that it has done so. Hopefully it changes in 6.0.1.
