I have an opportunity to buy a brand new G5 1.6 for $1750. Is this price point too good to resist? Are there any known issues with this model that I should be aware of?

There are a few precautions mentioned here,
http://www.info.apple.com/caen/g5/
But nothing really serious...
Unless you really screw up the firewire ports.

Talk about G5 deals, one guy on the web said he ordered a G5 1.6 at deal price from Apple and got a G5 dual 1.8 for the same price.

That G5 1.6 price you've got sounds like a good deal.

Yeah, i'd go for that deal. I paid $1919 CDN + taxes for my 'Deal' G5-1.6 earlier this week. I love the machine!
