Can I use Instant Alpha with b/w images?

I have a b/w image with some grey tones inside a black outline.

I'm trying to use instant alpha in Preview to remove the grey tones - the selection works fine but when I hit the delete key all that happens is that the selected part turns a uniform grey - I want the colour to be removed, ie essentially have that area white.

Does instant alpha only work with colours?
