Fresh Start with Time Machine Data

I am amazed at the ease in repairing--another story--my MacBook when I decided to take the opportunity to slim the junk files bogging my drive previously (a count of over 700 plist files attest to the fact. iTunes restored beautifully, purchased music and apps present my only problem was the absence of devices in the preferences, having two iTouches, an iPad and two iPhones backed up I have delayed my regular syncing. Can I just select the data from User>Library>MobilSync and create the necessary folders or should I use Time Machine? My thinking presently is that I should restored the data previous to launching iTunes, if so will another restore that replaces the present library or deleting all evidence of the previous iTunes library is suggested. Sorry about the lengthy query, however, if you knew long it took to get here, well... Thanks
