Like to know what other mac users are using in Panther as their main email program. I've been a Entourage user for a few years now. I really like the fact that you can organize your messages into folders and subfolders. However I find that it's not that stable in OS X. Seems to crash alot. I'd like to try another more stable email program. What's the apple one like? Is their another better?
I'm afraid you're preaching to the converted in my case. I've been using Entourage for years and have never had a problem (don't think it's ever crashed on me... But don't get me started on Word!).
Why not use Mail if you want a switch? I know lots of people who swear by it. One feature I love about Mail that Entourage lacks is a rule that lets you assign a different sound to emails depending on which subfolder they are directed to.

Mail.app is the best. The way I use it is I have various Inboxes and my Sent Items Cmd-selected so they all show up in the same viewer window, and then I use threaded view so I can see threads of conversation including what I said. Amazing how much clutter this removes. I find the Junk Mail filter is very accurate. From time to time I Cmd-select the Junk Mail folder too and see what got filtered out. Then in the rare case that I see something good that is marked with a junk symbol, I just select it and hit the "Not Junk" button. I have .Mac mail and it's nice to see the same Inbox over webmail. Address Book synchronizes with my Palm m505 just great. HTML rendering in messages is really fast. Dragging addresses around in the header, adding some to my address book, is all quick and easy. I have no thoughts about ever using anything else. Setting up rules is really simple and powerful, reminds me of Smart Playlists in iTunes. Sending "Windows Friendly" attachments seems to work just fine as well.
I must sound like a broken record by now, but I think this is the best email programme there is... MAILSMITH.
I like the filtering, the integration with SpamSieve and the built in POPMonitor feature which let's you see and delete mail directly from your SMTP server before you download your mail.
A tad pricy, but IMHO worth it.

It's Mail for me.
Mail is deceptive - looks simple, but actually reasonably powerful. Very stable and flexible too. You can have as many folders as you need. I used Entourage, and before that Outlook.
I found that most books & sites don't delve too deeply into Mail, and was glad to find the following book:

I use mail.app and I love it. I've never really needed anything else and it's certainly the most stable of the lot. Not to mention it's seemless integration with Addressbook.
Eudora is my gold standard. It's very simple, integrates Address Book and just plain works. I found that on a G4 TiPB 400 and G3 500 iMac, Mail was slower than Eudora at handling my in-box with 1,000's of messages.
I used Claris Emailer prior to moving to OSX. I've been using Entourage ever since. The only maintenance that I do is to copy the database on to backup every 3 months, delete unneeded email from the file and then do a rebuild. The only time that I've had problems with Entourage is if I allow the database to grow to over 2 gig. I just don't let that happen anymore
