So I am thinking of picking up the 16GB iPod Touch for XMAS. Biggest reason is I can sync everything up with my mac mini. Any tips on anything that I should buy with my purchase as far as must have accessories?
Like I said, I basically want to be able to sync things up with my mac mini, surf, email etc. . . Anyone run into hitches when it comes to any of that? Slow surfing via Wifi?
Also, as far as scratches, I've seen a few youTube video stating that the Ipod touch is almost unscratchable. Is there a need to get a protective shield for it?

I have never had any syncing issues and wifi has always been pretty responsive. The screen is small though. Too small in my opinion for any extended surfing but certainly good enough for grabbing pages on the quick.
Nothing is scratch proof. I would certainly recommend getting a protective case for it , as well as a screen protector. It's a minimal investment and well worth it in my opinion. My iPod is nearly a year old now and looks the same (out of case) as the day I bought it. Depending on the case, you will also get some protection against dropping it. I have one on the hard plastic cases that fit snug and managed to fling my iPod about 20 feet out of my coat pocket and down the sidewalk once. It came through unscathed.

some sort of full body shield (bestskinsever, or invisibleshield) and you are protected from scratches. A durable case (capsule rebel for ipod touch) and you will be fairly protected from drops.

Okay, as for the cases and all the protective stuff, here is my advice. Don't buy a screen protector because it's not worth it. You'll see why in a second. All you have to buy is a case (i.e. silicon, leather, I recommend silicon from personal experience). Preferably black for sleek-ness. Okay, so for the screen protector, the reason you don't have to buy one is because the iPod Touch should already come with the "packaging" (it did with my 1st gen iPod Touch, don't see why it wouldn't with 2nd gen). So, all you do is snip off the extra screen protector (make sure Home button is not covered because it can get sort of hard to press if screen protector is on it). I guess this was kinda obvious...

You mean people are not doing this ?? Throwing out a perfectly good (and free) protector, and buying another?
