I tried calling a local computer shop to see if they could order me the parts I needed. The guy is not getting back to me.

Who is a reputable dealer and what brand would you recommend.

No real parts needed, just the ram and a screw driver to open up the bottom of your iMac. Literally a 5 min job.

Never had an issue with Kensington in the past. Had issues with some Mushkin and OCZ, but its hit and miss, some work, some dont. On the Canadaram website, if you look under the apple section, all the ram is guaranteed to work so you should not have to worry about that.

I'd second Canadram, though I haven't ordered from him myself a lot of people on the forum have and seem to be very happy with the service.

In the early intel Mac models, the motherboard chipset limits the usable RAM to 3 GB even if you install 4 GB. There is no way around that. Since the 2 GB modules are relatively inexpensive, there is still an advantage to installing 4 GB because you will get dual-channel memory access from the matched pair, for about a 6% - 8% real world improvement in speed.

Please note that all CoreDuo (as opposed to Core2Duo) models, AND the 17" 1.83 GHz Core2Duo iMac (which was mostly sold into Educational market) are limited to 2 GB total RAM and will fail if you install a 2 GB module.
