For email links:
1. Open Mail
2. Go into preferences ->general
3. Choose Mail as the default email reader
For Word documents:
1. Select (not double-click) a Word document.
2. With this selected, press cmd-i (get info)
3. The fifth "section" of this info starts with "Open With:"
4. Choose a different application (Pages, TextEdit, whatever you have that can open Word documents).
5. Press the "Change All" button.
