The only ones with issues that we have seen are single 1.8s had a legacy issue.
Some dual get their fins plugged up and the fans spin up more often.
Other than that they are solid work horses.

Don' t forget to stay away from the liquid cooled ones. These hosted a number of issues, mostly with the colling system leaking and shorting out the power supply,motherboard etc... I believe they were the 2.5 and 2.7 ghz models.

I've come across a few with leaky pumps, though I wouldn't call it an endemic problem. A leak is pretty easy to check for at least: pull off the side panel and air deflector and inspect the area just underneath the massive "G5" processor cover: if you see a green or rust shaped residue, there's a problem.
Otherwise, G5s employing the liquid-cooling system are robust machines, and I wouldn't avoid them on principle.
I saw one or two leaky liquid-cooled PM's but I agree with Polygon -- ime, a rare problem, not a common problem. Of course, as they age this could get worse, and we're talking several years now since the last one was made, so I guess I would personally avoid them as well. Just MHO.

As with any used computer, a peek at the capacitors might be in order, I personally do not know about G5 PowerMacs (so I admit ignorance), but the time frame is "right" (and the problem is well documented in iMacs from this time period).
