My external drive has a complete bootable backup, but it's from my ibook's hard drive. Would I have any problems using this external drive to restore all my data on an intel machine? Could I still boot from the external drive?
hmmm, ok what about restoring apps that I don't have the cd's for but I have on my external drive such as VPC? I know, I know i can run Windows on an Intel, but i'd prefer to not buy another OS if I can still use VPC... and I like being able to "Alt ~" in between VPC and Tiger apps.

That's tricky, especially VPC. A lot of apps can simply be dragged from the old Applications folder on your External to your new Applications folder and will work without problem. I'd certainly try that.
The most annoying thing about changing computers is setting up all of your user preferences again, which is why I'd recommend you drag the /~username/library/ folder from your external to your new Mac and restart. It should restore a lot of the old prefs.
