I'm sure I saw a reference soon after Tiger was released for a mod that would replace the toolbar icons in mail.app with the old style icons but now I can't find the reference.

Mom, of the failing eyesight, is getting frustrated with mail because she can't see those faint icons and presses the wrong one and her mail ends up not being sent etc.

More frustration for Mom = more Prozac for me so if anyone knows how to make those silly icons stand out, please let me know.
