Need To Update
I have OS X 10.5.8
What is the latest update I should be going for?
My system is a 2.1 core Due with 2.5 GB

That should actually be a Core2 Duo in which case you can install Lion if you like which would take you up to 10.7

Andrew's answer needs a little elaboration:
IF your system is in fact a Core2Duo and not just a Core Duo, THEN you can buy a Snow Leopard retail disk ($30) and upgrade to it (10.6.x). After doing the free updates to get you to 10.6.8, you can THEN spend $30 on the Mac App Store (which you'll get as part of Snow) to upgrade to Lion (10.7.x).
If your system is a Core Duo (no "2") then the farthest you can go is Snow Leopard.

Then you can upgrade up to Lion as per Chas's post. You may want to check though and see what software you have that isn't compatible with Lion. Any old PowerPC apps will not work in Lion.

I finally purchased a copy of Snow Leopard.
To do an install I just do a back up, then install?
Will I have to reinstall any programs? ie. iWorks?
Looking forward to the new (old) updates.

So when I do a restore from my back up my itunes & iphoto & documents will all return to the way they are now?
I will also have to reinstall iworks, toast & any other programs, correct?

If you have Mobile Me, and haven't upgraded to iCloud yet, Apple will send you a FREE Mac OSX DVD for Snow Leopard (shipped for free, also).
