Evernote is great until you decide you want to export your data to another database. Then, there are problems on account of how their proprietary system tries to lock you in. There was an interesting discussion about that on TUAW a few months ago in which users called Evernote on their bullshitake on that subject.
I'm a big fan of Simplenote. It generates text that can be synced over multiple devices (I also use it to write draft tweets for posting at a later date...no fuss...just gets the job done). Apparently there is also an application that will sync all those iPad/iPod/iPhone simplenote entries into Yojimbo on your Mac.
Note Taker HD and Penultimate work well for quick notes that have smooth inking. The palm rejection on Penultimate works well. Mysmartnote has more features with paper, text input, color, palm ignore area, etc, but inking not as smooth. Note Taker HD has neat way of getting small ink strokes. But to meet my work needs for organization, searching etc Evernote provides this need better. What I find helpful is that I can take a pix of ink notes from the other apps and insert to Evernote so as to make use of the organizational tools. Still playing around to find effective combination. What are others doing?
