Quick question:
When I'm listening to an Audible book on my iTouch, does it automatically sync to iTunes on my Mac to the place where I stopped listening the next time I sync things? Can I only listen to the book in an either/or situation? ITouch or iTunes?

The time won't synch back and forth. If you plug in the iPod and select the book from the iPod list when listening off the computer, the time will move along on the iPod, if I'm not mistaken.
