Any reason that I can't update my itunes to 7.5? Will it affect my unlocked iphone?

Updating iTunes is safe. It's updating the iPhone firmware that will lock / brick your unlocked phone.

When Jailbreaking a 1.1.2 OTB iPhone, I don't believe iTunes 7.5 will work. You cna update once that process is completed.

iTunes 7.5 works fine. You just need to follow the instructions that come with the software.

At the time, multiple jailbreaking sites warned that success with 7.5 and 1.1.2 OTB was inconsistent at best.

I guess that has changed.
