Their advise buy another IPad and hope it has IOS 9 on it.
Have you considered forgetting iTunes and using iMazing (was DiskAid) instead, that also works with OS X 10.7.x:
https://www.macupdate.com/app/mac/27830/imazing

PS: Much more useful than iTunes by a long shot, and even though it's a bit expensive, it can still do a lot in "demo" mode.

PS: You could also try googling to see if you could install iOS 9.x via a jailbreak. I'm not sure if any "signing" is needed or not using that method.

I checked out IMazing but it requires ITunes 12.5 which won't work with my system software (1.,7.5).
Prothemus looked good but a recent check shows it is unable to install an unsigned version of 9.3.3 to the IPad Mimi. Any other posts regarding unsigned versions and jailbreaking are dated and indications are Apple has been quick to fix holes in the IOS that allow jailbreaking.

I sent them an email about the iMazing popup message requiring some iTunes 12.5 stuff that I didn't want about a month ago, and their reply didn't make much sense, maybe due to the Swiss/English translation, but it seemed to work OK without it.

I have since installed the iTunes 12.5 update on my Mavericks 10.9.5 iMac and I don't see much difference except the popup message to update for some iTunes needed stuff no longer appears.

All a bit odd as their advertising and reviews for their 2.x version says it can run and work without any iTunes support.

Maybe just give it a try and see. You won't know 'till you try.

Edit:
BTW: The older iMazing 1.5.10(OS X 10.7, Intel64) version is available at the same site:
https://www.macupdate.com/app/mac/27830/imazing

I'm just thinking that the latest iTunes sure wasn't around when it was released, so maybe it will work bearer for you.

New version (2.0) or old version (1.5) neither work with my desktop system and the IPad Mini 2 running 10.2.

Try dropping the developers a note and asking if they might have a suggestion or solution for your situation.

Their address I ended up with was:
support@digidna.net
