Great Notes App
For anyone looking for a good notes app for their iPad, I would highly recommend Notes Plus.

What I like about Notes Plus is that you can also purchase the handwriting recognition which converts your handwritten note into text and does quite a good job at it, too.

I'm using it on my iPad. I like how you can tap-hold and then write without running out of room. Haven't tried it on the iPod Touch yet. Not sure why the bad reviews.
